		<description>I love the site and the message.  
   We save all compostables and used kitchen oil for local farmers.  We buy nearly everything we serve from local sustainable farms.  Our entire raison d'etre is a green and progressive political statement.  Our space is a model of green construction.  
   Our mission statement includes, "working to help preserve rural culture, curing, canning, jaring, nose to tail theory...."  Only raw ingredients come into our restaurant. We make EVERYTHING from scratch; saving packaging waste.  
   We serve only freshwater fish - no ocean to be seen from the highest hill I can find, but sensible freshwater aqua culture (without feed from drag netted sea floors) may provide an alternative.  Rope cultured river mussels could possibly save native species from extinction from  the invasive Zebra mussels and pollution.    
   We've been in dialog with the Dept of Conservation and MU, utilizing agri Missouri, Mu Extension, and local schools (Smithville High School and the culinary dept of the Northland Career Center Vo tech school - where I sit on the advisory board).  
   We are actively developing local sustainable small farm agribusiness based on cultivating and foraging wild indigenous edible plants  - biodiversity is key and variety is the spice of life and exciting food. Please call us

Located in downtown Overland Park, they're readily accessible for the many justice-oriented persons in the area.</description>
